Cheesy Potato Cake (Llapingachos)

me and my family like eating llapingachos which are called cheesy potatoe cake my mom makes this at home we eat this with rice sometimes or we put sides in like eggs sasuge or avcado or tomatoe there are made with potato pancakes made from mashed potatoes, seasoned with onions, and stuffed with cheese. They are crispy on the outside and creamy on the inside, and may take a little time to make but are definitely worth it.
